This recipe started as 'Taunton chicken' (chicken in a cider and cream sauce), but over the years, the addition of onions, brambles (blackberries), and the haggis stuffing has transformed it into an original and tasty dish! For those who might find it too rich in cholesterol, it's ALMOST as good if you substitute olive oil for the butter, and Greek yoghurt for the double cream!

  • 1 Haggis
  • 50g plain flour
  • salt and freshly ground black pepper
  • 2 oz unsalted butter
  • 1 litre dry cider
  • 2 onions
  • 2 large tablespoons bramble jelly
  • ½ litre Double Cream
  • Garnish
  • 2 dessert apples
  • 2 Cups wild Brambles/Blackberries
  • Parsley
  • Lemon
  • Drizzle olive oil (substitute butter if preferred)

  1. If using a frozen bird, ensure it is completely defrosted. Cut open the haggis, scrape out all the ‘meat’ and use it to stuff the bird. Roast until fully cooked (180 degrees for 20 minutes per pound plus 20 minutes).
  2. Pierce several times in the legs, thighs, wings, and breast to allow the fat to drain. Set aside to cool. Pull away the skin from the bird, and carve into portions.
  3. Make seasoned flour by mixing the flour, salt and pepper. and coat the joints in the seasoned flour. Heat the butter in a pan, and toss the joints in it until the outside is pale golden. Drain any excess butter, and stir in the cider, bringing the sauce to the boil, to cook gently. Dice the onions and add to the pan, add the bramble jelly. Simmer for about 45 minutes.
  4. Stir in the cream at the last minute, and warm very gently for a few minutes.
  5. Core and slice the apples leaving the skin on. Fry the apple slices and brambles gently in the remainder of the butter until just softened. Add most of them to the sauce during serving.
  6. Arrange the portions of duck or goose on the plate, and coat with the sauce. Garnish with the remainder of the lightly fried apples, brambles, parsley and thin lemon slices, and serve with Brussels sprouts and baby potatoes.

Roast Duck with Black & Blue Jam Sauce

This recipe reminds me of a Danish dish with lingonberries. Duck seems to demand sweetness and this Black & Blue sauce adds a little complexity that works well when the duck is all crispy.

  • 1 jar Bonnie’s Black & Blue jam
  • 2 whole star anise
  • 1/2 cup white wine vinegar
  • 1 whole duck, trimmed of excess fat, giblets discarded
  • Salt & pepper

Prepare sauce: heat jam in a saucepan with star anise and vinegar until just simmering.

Remove and discard star anise. Put sauce in bowl, cover, and allow to cool.

Prepare ducks: Heat oven to 325 degrees. Season duck with salt and pepper to taste and place on a rack in a roasting pan. Cook, uncovered, for 3 hours, periodically draining off fat in pan. Raise heat to 400 degrees, and roast an additional 30 minutes to crisp skin.

To serve, remove duck from oven and place on a carving board. Cut into four pieces. Cut away meat from rib cage, discarding rib bones. Arrange on a serving platter, crispy skin side up. Serve with Black & Blue sauce. Fresh blackberries and blueberries can be used as a garnish.


Slow cooker pheasant casserole

You'll need two pheasants, each cut up into four portions, for this slow cooker casserole recipe. If you're not sure how to do this, ask your butcher to do it for you.

You'll need to brown the pheasant before adding to the slow cooker and cook for up to seven hours until meltingly tender.

large oven-ready pheasants, cut into four portions (see Tip)

plain flour, plus extra to dust

rindless streaky bacon rashers, halved

dried juniper berries, lightly crushed

cm (1in) piece fresh root ginger, peeled and finely chopped

(¼ pint) hot pheasant or chicken stock

crisp eating apples, such as Granny Smith

Season the pheasant portions and dust with flour. Melt 40g (11/2oz) of the butter in a large pan and brown the pheasant portions, in batches, over a high heat until deep golden brown on all sides. Transfer pheasant to a slow cooker (don't turn the cooker on at this point).

Add the bacon rashers to the empty pheasant pan and fry over a high heat for 4min, turning once during the cooking time, until golden. Turn the heat to medium, add the onions, celery, juniper berries and ginger and cook for 8-10min until the vegetables have softened.

Add the flour and cook, stirring, for 2min, then gradually stir in the hot stock and the cider and bring to the boil, stirring frequently. Carefully pour the mixture over the pheasant pieces in the slow cooker, season well, then cover and cook on Low for 6-7hr until the pheasant is tender.

Lift out the pheasant and put into a warmed dish and cover loosely to keep warm. Strain the sauce through a sieve into a pan. Stir in the cream, bring to the boil and bubble for 10min or until syrupy.

Quarter, core and cut the apples into wedges, then toss in the lemon juice. Melt the remaining butter in a small pan and fry the apple wedges for 2-3min until golden. Put the pheasant back into the sauce, along with the apples, warm through and check the seasoning before serving.

If you're not confident cutting the pheasant into portions, ask your butcher to do it for you.


Duck Legs with Roasted Vegetables and Pomegranate Jus

“If you browse through old German cookbooks, you’ll discover the seemingly non-Germanic combination of pomegranate seeds and duck,” says Jeremy Nolen in New German Cooking, the cookbook he wrote with his wife, Jessica. Here, pomegranate and orange juice offer counterpoints of acidity and sweetness to heartier flavors of duck and roasted root vegetables. Maggi sauce, an umami-rich seasoning similar to soy sauce, was first marketed in Germany in the late 1800s, but it’s better known today in Asian and Latin American cuisines.

  • 4 duck legs
  • 2 turnips, peeled and cut into 1-inch cubes
  • 2 carrots, peeled and cut into 1-inch cubes
  • 2 parsnips, peeled and cut into 1-inch cubes
  • 2 Yukon gold potatoes, cut into 1-inch cubes
  • 1 yellow onion, cut into 1-inch cubes
  • 4 springs fresh tarragon
  • Kosher salt
  • Fresh-ground pepper
  • 16 ounces pomegranate juice
  • 2 tablespoons Maggi seasoning sauce
  • ¼ teaspoon allspice
  • 1 tablespoon red wine vinegar
  • Juice of 2 oranges
  • 1 tablespoon peeled and finely minced fresh ginger

Heat oven to 400˚F. In small roasting pan on stove over medium-high heat, sear duck legs, skin-side down, until skin turns golden brown, about 6 minutes. Turn duck legs over and cook 5 minutes more. Remove pan from heat.

With slotted spoon, transfer duck legs to plate. Add turnips, carrots, parsnips, potatoes and onion to roasting pan, and stir to mix with fat. Place tarragon sprigs on top of vegetables and season with salt and pepper. Place duck legs, skin-side up, over vegetables. Place pan in oven.

Roast duck legs, turning vegetables occasionally, until instant-read thermometer inserted into thickest part of leg away from bone registers 165˚F, about 1 hour.

Meanwhile, combine pomegranate juice, Maggi sauce, allspice, vinegar, orange juice and ginger in small saucepan set over high heat. Bring to boil, then lower heat to medium and cook until reduced by half, about 20 minutes.

Transfer duck legs and vegetables to plate or platter with jus. Serve immediately. Serves 4.

What Exactly Is Mead?

If the mention of mead conjures up images of Vikings hoisting steins in the mead hall or Hagrid ordering a round at the Three Broomsticks pub in Harry Potter, you're not alone many of us think of mead as a drink of yesteryear. But while mead's roots are ancient — fermented honey wine is one of the oldest beverages in history — modern mead is much more nuanced. So, raise a glass and say "Wassail!" (that's the mead drinker's "Cheers!") and read on to get the buzz on mead.

The short answer: Mead is wine made from honey. But since honey is roughly 80% sugar, it won't ferment on its own, so it's diluted with water and combined with yeast to help it ferment. "It takes anywhere from a couple of weeks to a couple of months to finish fermenting. Some need age, others don't," explains Steve Villers, who along with his wife, Joanne, owns Blacksnake Meadery in Dugspur, Virginia, and The Hive tasting room in Roanoke.

Because it's made with honey, it's fair to assume that it tastes sweet. While some meads are indeed sweet, this wine can be made in a variety of flavors and finishes, just like any other craft beverage.

There are a dozen different styles

There are around 12 different styles of mead, varying in sweetness level, finish and alcohol content. Diane Currier, the owner and mead maker behind Honeygirl Meadery, in Durham, North Carolina, says that within each style there is a lot of range, from bone dry (as in the wine world, "dry" means "not sweet") to sweet. "There's a lot of diversity," agrees Villers. "Ours range in sweetness from dry to fairly sweet, so we adjust the sweetness by diluting the honey more for dry mead, or less for sweet mead."

There's usually a correlating reference point for whatever your usual beverage of choice is, and mead makers, aka mazers, believe there's a mead for everyone. (Many meaderies have taprooms where you can sample a flight or have a mazer walk you through a tasting.) Besides traditional, semisweet mead, here's a primer on other common styles you can expect to encounter on your mead-tasting journey.

Mead made with herbs and spices are called metheglins. Ivar Schloz, who owns Bee & Bramble in Fairview, North Carolina, makes a full-bodied one with local ginger, lemongrass and orange zest that boasts plenty of aroma, tartness and zing. (Calling all riesling and pinot grigio fans!) Honeygirl's hibiscus-lemon-thyme metheglin is dry but comes across as a lighter-bodied white wine with a honeyed finish.

Melomels are meads brewed with fruit depending on the kinds of fruit and the fermentation process used, some are fruitier than others, and they can be sweet or dry. If you're typically a red wine drinker, Currier advises opting for a mead brewed with dark berries, which can take on similar tannic qualities.

Cysers are meads made with apples, so they're a natural entry point for cider drinkers. (Note: These are typically cloudier in appearance than other styles.) Currier has recently started making session meads, which are another natural bridge for cider drinkers, since they have a lower level of alcohol (7% or less) and they're almost always carbonated.

If beer is usually your thing, try a braggot, a mead made with malted grains and often hops, too. Blacksnake makes one in which the honey is boiled with local hops, imparting a touch of bitterness akin to that of a pale ale.

A bochet-style mead is one crafted with caramelized honey, which can add complexity to sweet meads. Some mead makers heat the honey almost to the point of being burnt, which imparts a toasted-marshmallow flavor. Villers doesn't take his amber-hued bochet quite that far, but it still boasts plenty of caramel notes and an almost sherrylike quality, making it ideal for sipping in place of port (great as a nightcap).

It has its own terroir

Just as similar grapes grown in different regions take on characteristics of the earth, the flavor of honey is informed by its various nectar sources — flowers, fruit blossoms, herbs — which in turn imparts different qualities to the mead.

"Our brains automatically go 'thick, syrupy, sweet' – those are our quick association with honey. But as soon as we start talking about it, people are blown away, because honey is nectar made from billions of visits to flowers," Currier says. "So, when we ferment with it, we're working with all of those nectars and the magic of bees transforming that into honey. We can tease out and ferment out the different sugars that exist in honey, so we can discover all those nuances."

Currier makes mead with North Carolina wildflower honey, but the yields vary depending on the time of year and what the bees are pollinating. "The apiary [we work with] has a lot of buckwheat on the land where the hives are kept, so that honey tends to lean more towards the darker side," Currier says. "I make a mead with that honey exclusively and age it for a couple of years. I add oak to it, because it has almost molasses notes." The resulting mead has a winelike viscosity and a rich flavor profile dictated by the bold, dark honey.

"The source of honey gives you different characteristics, just like the variety of grape [in wine] or the types of grain or hops that go into beer. A lot of honey in Virginia, especially darker wildflower honey, has a nutty flavor and a little bitterness," Villers says. "With other honeys, especially in Roanoke with the black locust honey, you get a lot of floral aroma. We have made mead from Tupelo honey from Florida which has a bit of acidity, so it gets a citrusy character from that."

Given Bee & Bramble's locale in the southern Appalachian Mountains of western North Carolina, Schloz uses blended wildflower mountain honey. "Because we ferment to dry conditions, the floral characteristics of each blend will present themselves in the aroma of the finished wine, and blended wildflower honey is ideal for producing a nose with true character," Schloz explains. Next, he'll introduce meads made from single-source, single-season mountain honeys, each aged in oak barrels with different toast levels to harness the honeys' seasonal characteristics.

Its flavor possibilities are endless

Currier was inspired by Thanksgiving for Honeygirl's cranberry-sage mead, pitting a Southeast regional honey with striking caramel notes against tart cranberries, then pulling in earthy sage to bridge the sweet-tart flavor profile. Blacksnake frequently uses its semisweet mead as a base for flavor infusions, such as mango-habanero, an autumnal medley of cranberry, orange zest and clove, or even coffee, crafted with Red Rooster Coffee Roasters beans. Ginger is a complementary and frequently used addition that can stand on its own or meld with other ingredients. At Bee & Bramble, Schloz makes a blueberry-ginger number and a floral-leaning metheglin with ginger, chamomile, rose petals and hibiscus.

It plays nicely with others

Because the flavors and styles are so nuanced, meads can inspire pairings just as other wines can. Bee & Bramble's labels indicate whether the mead skews sweet or dry, then offer pairing suggestions accordingly. Its traditional dry mead, for example, is on the dry and floral end of the spectrum, which makes it a versatile player that can stand up to the likes of beef dishes or spicy vegetarian food, without overwhelming lighter fare like salads.

Currier says that mead and cheese are a natural match and a great place to start if you're looking to experiment with mead pairings. "We have acidity, sweetness and balance in a glass that can be complemented by the creaminess or sharpness of cheeses," she says. A cyser, for example, with its natural apple notes, would pair nicely with an assertive blue cheese. As for Honeygirl's cranberry-sage mead, pairing suggestions include rosemary chevre, roasted duck, butternut squash soup and turkey sandwich (hello, Thanksgiving leftovers).

While mead is great sipped on its own, it can also easily step into a cocktail, filling roles usually played by other ingredients. "If it's a fruit-based mead, it can be fruit juice. If it's a semisweet traditional mead, it could be simple syrup. If it's a metheglin, it can be the herb and syrup in one," Currier says. In the All You Mead Is Love cocktail, featured in Chrissie Manion Zaerpoor's book The Art of Mead Tasting and Food Pairing, Honeygirl's hibiscus-lemon-thyme mead mingles with gin, hibiscus tea and rosemary simple syrup to refreshing, botanical effect.

You can also cook with mead try using it in place of wine as a deglazing agent to make pan sauces, as with this orange mead sauce, which accompanies pan-roasted duck.

The Cottage Smallholder

We always use cooking apples for apple jelly so that it is not too sweet and much more adaptable. For years I only thought of jelly as an accompaniment to meat. The jars opened and enjoyed but usually lost in the depths of the fridge. I cringe now at the thought of the great jellies that must have been wasted on us.

Over the past couple of years we have begun to discover the breadth of the jelly repertoire. Initially, we worked hard trying to make jelly with a good flavour, rather than the ultra sweet stuff that I remember as a child. I asked all my clients for tips. Armed with this unique knowledge, (most of them are good, inventive cooks) and a lot of experimentation we have finally made a small range of jellies that we think are good. This delicate apple jelly is one of the stars.

As we had all these pots of jelly crowding out the larder we were forced to become adventurous. We found that a decent dollop of a stronger jelly in a stew lifted the flavours. We ate it with cheese. We used it in casseroles, as a sauce base for pork and chicken and stirred it into hearty winter soup. We even tried in stir fries (great with a chicken or duck.

We found that dark meat and game cry out for a slightly stronger jelly, such as our damson or wild plum. We also make a punchy sloe and Bramley jelly which adds an extra fillip to a pheasant or venison dish. If we run out of the more raunchy jelly, Danny adds a slug of sloe gin, although I prefer the sharper fruity effect of damson gin. A dash of sloe or damson gin is super in stews, sauces and gravy. You can’t taste the alcohol, just a deep, mellow flavour.


Huancaina (Peruvian Spicy Cheese Sauce)

I’m always on the look for new dips or sauces to make and this one is great. This recipe has been made twice in two weeks, once for lake trip and once when my son came for his 20th class reunion.

One of the most famous sauces in Peru is Huancaina (wan-kay-eena) served with cold sliced potatoes, raw vegetables or fried plantain chips. I vote for the plantain chips.

Several years ago we dined at a Peruvian restaurant in Washington, DC. Cute little place with all the pictures on the wall hanging crooked and there was actually a reason for that and it had something to do with feud with either Mexico or Spain but I don’t remember. Like I said it was years ago.

So, back to the restaurant. Back then we probably ordered something pretty safe and the waiter asked us several times if we had tried this or that and when we said no, he brought samples out for us to try one being tongue. Instead of the usual oil with bread to dip it in or bread and butter we were served this pink (this recipe isn’t pink) butter type mixture with bread to spread it on. I never forgot what he told me was two of the ingredients — saltine crackers and milk.

I hadn’t thought about this sauce for years until recently when it was served to us one night at a South American restaurant and once I found out the name of the sauce I went in search for the recipe and found several recipes all with basically the same ingredients.

Finding already prepared plantain chips was not easy. I thought I could pick them up in the chip isle — not there, then in the bulk section they only had spiced ones (wouldn’t work), so I decided to make my own. Never made them before and they were pretty easy. The hardest part about making the plantain chips was getting the peeling off. They are NOT as easy as peeling a banana. You can see in the pictures below how I went about getting the peeling off. I also watched several videos on YouTube on frying plantain chips. (Note: the one thing I learned from doing the chips the second time is DO NOT use ripe plantains. I had a very hard time getting them crispy and they were really hard to slice on the mandolin so buy really green ones.)

If you read the grilled Peruvian chicken recipe and decided to order the aiji pepper paste then you can get two uses from the jar. Why not order all the spices you need for the chicken dish which was delicious and then you have the pepper paste that you can use to make this appetizer to go with the chicken.

BLAST FROM THE PAST: It’s ice cream season again and this Banana Pudding Ice Cream would be perfect with the Peruvian Chicken and this spicy cheese sauce/dip above.

Still can’t believe this dip has saltine crackers in it. I ended up adding some garlic also.

Simply throw everything into your blender or Vitamin and in seconds you have a spicy cheese sauce/dip.

Cut the ends off the plantain.

Cut a section of the peel and then using a sharp knife remove the remaining peel.

Using a mandoline, slicer or by hand, cut the plantain as thin as possible. Mine were about 1/16″.

Fry the plantain slices in 350° oil for about 4-5 minutes.

You will know when the chips are done because the bubbling of the oil will calm down.

Remove from oil and drain on paper towels. Salt while they are fresh out of the oil. When cool, store in airtight container.


Smoked Cured Egg Yolk

Ok, so this isn’t much of an adventure but more of a “what else do I have to do with my time anyway” now that Thanksgiving is over and you are sick of looking at food.

My son, Scott, is always sending me some interesting food recipes to try like his 24 hour No Knead Breadb or gravlax and now these cured egg yolks.

Like Scott, I didn’t want to waste a bunch of eggs the first time I tried making this yellow ball that looks like a dried apricot when you are done with it at the end of a long week. So at the end of this week, I had only one yolk to show for my 168 hours of watching and waiting and I grated it carefully not wanting to waste one speck of this yolk over some smoked salmon and sour cream that I put on top of my Herbed pizzelle. I can’t say that I thought it tasted any different than an egg but it was so pretty grated like a big puffy pile of yellow.

Salt curing is the oldest method of food preservation that simply involves covering food with mixture of sugar and salt to draw out the moisture of the food. This method changes the egg yolk to a firm little flatten yolk that has the consistency of parmesan cheese put it on your veggies (I tried some roasted asparagus), salads or spaghetti carbonara. Maybe put the grated yolk in your compound butter or wouldn’t it be wonderful on top of some avocado toast.

My second adventure with this egg started after seeing an article written by Chef Jonathon Sawyer on Tasting Table and how he smoked his egg yolk after curing. I decided to take it a step further and add some dried thyme leaves, peppercorns and a few fresh bay leaves to the salt mixture to see what kind of flavor that would impart on the yolks and to top that off I used some of my husband’s apple wood chips and used Jonathon’s method of smoking. I would skip this step the next time because I was afraid I was going to turn the yolks into hockey pucks.

Three easy (long) steps, cover with salt/sugar, wait/dry, then rinse and dry in oven or dehydrator then enjoy. You can skip the smoking step and go straight to the dehydrator or oven to finish drying. And, even if you don’t make this, when you see an item on a restaurant menu that includes “cured egg yolk” you will least know you have heard of it.

After mixing the sugar, salt and spices, put half of the mixture into an 8″ dish. Or, if you decide to do just one egg yolk, mix up about 1/4 of the salt mixture and put it in a ramekin with your one yolk.

Carefully put each egg yolk into the little divot you have made in the salt mixture.

Cover the yolks with the remaining salt mixture making sure all the yolk is covered.

After your 5-6 days, carefully dig out your yolks.

Rinse the salt/sugar off the yolks with water or above I used 1/2 cup of apple cider vinegar and water. Water will work. The guy that smoked his eggs used this method to rinse off the salt. I can’t say that I could tell the difference.

i think this was really an unnecessary step. I or my husband put some wood chips on top of foil in a cast iron skillet outside and I smoked the eggs for just 2 minutes. My smoke got pretty hot and I think that the 10 minutes that Chef Sawyer suggested would have ruined my eggs. so I took them off after 2 minutes. Can’t wait that imparted much smoke flavor into the egg yolk.

See how my yolk started to burn. I decided to put in dehydrator for 2 hours. Or, you can use an oven at 150° for 1 1/2-2 hours. Then cool and refrigerate until ready to use. These will last several weeks in the refrigerator.

Use a micro grater to grate soft, curls of egg yolk. They make a great garnish on just about anything.

Cheeky Vimto

An old student favourite, but with good reason! Cheeky Vimtos are ridiculously easy to make, and they come out a pretty yummy colour too. Need we say more?

  • 50ml of port (small bottle)
  • 25ml of vodka.

Jammy Dodger Shot

Ok, so this one is more of a shot than a cocktail, but the Jammy Dodger cocktail shot is the best-tasting shot that will ever grace your mouth. You won't be grimacing when you knock this one back!

  • A bottle of Chambord (blackberry liquor)
  • Double cream (yes, really)
  • Sugar (available from all well-stocked cupboards).

  1. Fill the shot glass three-quarters full with Chambord
  2. Top up the shot with cream
  3. Sprinkle a little sugar on top, knock it back and enjoy!

Sex On The Beach

Perfect for the summer. Or the winter. Or whenever, really.

  • 200ml of cranberry juice
  • 100ml of orange juice
  • 75ml of vodka
  • 75ml of peach schnapps.

  1. Mix together all of the ingredients (use a shaker if you've got one)
  2. Pour into a glass of ice and enjoy.

Piña Colada

If you haven't tried a homemade Piña Colada before, you're in for a tropical treat. It's a personal favourite of ours (we also like getting caught in the rain) and comes highly recommended!

  • 50ml of white rum
  • 25ml of coconut cream
  • 25ml of single cream
  • 200ml of pineapple juice.

  1. Mix together all of the ingredients (again, use a shaker if you've got one)
  2. Serve over ice
  3. If you want to cheat, you can save buying the first three ingredients and just use Malibu instead!

Woo Woo

Woo Woo is a Wetherspoons favourite, but you can easily make this at home too – and it's cheaper. Here's how.

Mojito

Mojitos have definitely risen in popularity recently (especially amongst students), and it's easy to see why! Best of all, they're pretty damn simple to make, too.

Mojito ingredients

  • Half a lime (cut into 4 pieces)
  • 5 fresh mint leaves
  • Tablespoon of sugar
  • 50ml golden rum (Captain Morgan's spiced or Havana Club should do)
  • Soda water
  • Handful of strawberries or raspberries (optional, but it gives an extra burst of flavour).

Mojito recipe

  1. Put the lime, mint leaves and sugar (plus the berries, if you're using them) into a glass and mash them together with any utensil you can find (the handle of a plastic utensil, like a spatula, can work)
  2. Add the rum, top up with soda water and stir. Your mojito is now ready!

Long Island Iced Tea

Perhaps one of the most alcoholic cocktails out there, so take great care with the Long Island Iced Tea. But it does taste really bloody good.

  • 25ml of light rum
  • 25ml of vodka
  • 25ml of gin
  • 25ml of tequila
  • 25ml of lime juice
  • Coke.

  1. Mix all of the alcohols together, along with the lime juice
  2. Pour into a glass over ice
  3. Top up with coke and your Long Island Iced Tea is now ready!

Tequila Sunrise

Zingy, refreshing and a pretty cool colour to boot – we've got to confess, we're a little bit addicted to Tequila Sunrises at Save the Student.

  1. Mix the tequila and orange juice together
  2. Pour into a glass over ice
  3. Slowly pour in the grenadine, allowing it to settle at the bottom of the glass. Looks like a sunrise, doesn't it?

Fluffy Duck

Who doesn't want to drink a drink with name like 'Fluffy Duck'? And it's yellow. Who even cares what it tastes like (not bad, as it happens)?

  1. Mix the rum, cream and advocaat together in a glass
  2. Top up the glass with lemonade
  3. If you're feeling adventurous, try replacing the cream with ice cream. Trust us on this one!

Singapore Sling

Anything with alliteration in the title sounds good to us! The Singapore Sling is probably the most demanding in terms of ingredients, but we promise it's easy to make and totally worth it!

  • 25ml of gin
  • 25ml of cherry brandy
  • 50ml of pineapple juice
  • 10ml of benedictine
  • 10ml of grenadine
  • 10ml of cointreau
  • Soda water.

  1. Literally mix everything apart from the soda water together
  2. Pour into a glass of ice
  3. Top it up with soda water. Told you it was an easy one to make!

Lemon Drop

Everyone needs a bit of zest in their life every once in a while. And who knows, a Lemon Drop might even count towards your five a day?

  1. Wet the rim of a glass and roll it in the sugar
  2. Mix the vodka and the lemon juice together in the glass
  3. Top it up with lemonade.

oooohhhhh. the green monster one sounds epic! What are the ingredients. is it only the green skittles you use then?

Yeah, green skittles but not too many! There seem to be a few different versions of the drink. Think it had vodka, barcardi, cider and lager in it too, topped up with a double measure of Blue Curacao! Dangerous!
